Tasty Tuesday

We had a potluck at work for chips and dips and I altered a seven layered fiesta dip to my own liking. The following year that we had another chips and dips potluck, so many people requested that I make it again. Well, you sometimes gotta give the people what they want! 🙂

7 Layered Fiesta Dip

1 16oz can vegetarian refried beans

3 Tbs picante sauce

1 16oz container sour cream

1 pkg taco seasoning mix

2 c shredded cheddar cheese (I use sharp)

1 c chopped avocado

1 c chopped tomatoes

1/2 c slice green onions

1/2 c sliced black olives

Tortilla Chips

Heat beans over low heat and add picante sauce. Let cool and spread in shallow serving dish. Mix sour cream and taco seasoning together and spread over beans. Layer the remaining ingredients in order. For best results, chill in refrigerator at least 30 minutes. Serve with chips.

Music Monday – Ashley DuBose

Today’s Music Monday post comes from Indie artist Ashley DuBose. This singer-songwriter hails from St. Paul Minnesota and I have to admit that I was drawn in by her amazing voice and sound. I can only describe it by saying her voice reverberates between the notes.

“Life Goes On” is an inspirational song from her debut digital album release Somethin’ More.

Don’t sell yourself short on this artist. Other notable songs on the album are “Guilty” and “Lose a Good Thing.”

Caught in the Rain

Have you ever stood still in the rain allowing it to pour down on you? I can hear all my black sisters, “What? And get my hair wet?” I can see us now, crowding under umbrellas, wearing protective coverings for our clothes & hair. And what if we get caught in the rain? We’d run for cover as quickly as possible. But let’s think of this in a metaphorical sense.

Have you ever just stood still & allowed God’s blessings to rain down upon you? Or are blessings bouncing off your umbrella of bad habits? Do you cover your head with a negative attitude? Do you cloak yourself in selfish behavior?

Sometimes our actions & attitudes prevent us from receiving God’s rich blessings. Other times we dodge & run away from God’s blessings because we are too afraid to step out on faith. Maybe it’s time for us to change our mindsets & intentionally get Caught In The Rain.
